Trinity Force is a must, as with any AD auto attack based bruiser, you want Black Cleaver or Trinity Force for the stats and passives it provides.
Glorious Enchant in my opinion is the best enchant you can get, the other enchants either become a stacking effect ( Quicksilver Enchant & Ragnarok or Shadows Enchant & Undertow ). On top of this it can be used in scenarios where Undertow misses or is out of reach.
Sterak's Gage in my opinion is one of the most overlooked items. Giving you 30% Tenacity when you're low (after you've used ult in a decent amount of fights) and 50% base AD increase is a lot bigger than people realize, especially when you take into account the additional AD from Ragnarok and the synergy with Berserker Rage . It also provides +400 Max HP so you'll be sitting at +600 HP with your 2 item spike.
Guardian Angel is next, just a very abusable item, letting you finish a fight you started if you couldn't, I think its the most OP item in the game this patch (extra life is worth so much in a game you fight a lot), each death it technically is saving you 400+ gold from the enemy, Including the stats on it it doesn't really become value for a few deaths but I think it values itself after 2 deaths and gaining 2 kills after Resurrection, but that's after just doing napkin math so not too sure on that. Either way very strong purchase this patch I expect it to get nerfed in 1.2.
Spirit Visage has inbuilt synergy with Vicious Strikes , also provides the necessary stats to not get insta-killed by an AP Champ.ย
Randuin's Omen is just a safe last item. Most hyper carries will be dealing crits or lots of attacks so omen helps, you also can get Thornmail here if you don't think you need Omen.

Weakness works with Undertow , which rounds out to a slight increase in damage over Brutal. Otherwise you can also take Triumph

When you both are on 1 item Gragas' first ability rotation should put you on low health but shouldn't kill you, this is your first spike in the match up and you need to push leads wherever you can to keep ahead, he can use Explosive Cask to try and peel himself or a teammate from range.
VERIFICATION OF THE BUILD
As you can see here I have a 75%ish WR on Olaf, although it is only 19 games due to me being an ADC main I have talked about this build with many other players and weighing the pros and cons of the build and we have come to the conclusion that this is the better build / level up process for patch 1.1 Olaf.ย
ABILITY 1 OR 3
Having a quick look at the images above you can see that Reckless Swing scales with AD where as Undertow scales with bonus AD. What this means is that the total AD value is taken from all sources, like runes, items, base stats etc. Bonus AD is only taken from items, runes and ability buffs. Due to this it actually is smarter (and faster as I will show below) to max Reckless Swing first. giving it a 3 second lower cooldown and giving it more stats before you build your items means by the time you level up Undertow as well you will have the Bonus AD for it already. Reckless Swing is an absolutely crazy ability, with your attack speed from Trinity Force and Vicious Strikes it really feels like a 4-5 second cool down.
OLAF ULT SYNERGIES
So another reason to level Reckless Swing first is for the synergy from the bonus AD with Ragnarok . As it stands right now you're gaining 40 bonus AD at level 9, with a level 3 Undertow you're dealing 270 dmg slow on repeat if you're able to keep picking up axes, this combined with a 4-5 second cd ~350-450 damage Reckless Swing you're going to be 1v1ing and running down anyone you desire.
Jungle Pathing
I personally do the following path:
Reckless Swing > Undertow > Vicious Strikes
Red > Chickens> Wolves > Blue > Gromp > Scuttle*
This path gave me an in-game timer ofย
1:47 Undertow start red (127 second clear, solo)
1:39 Reckless Swing start red (119 second clear, solo)
You must position yourself on Chickens and Wolves that Reckless Swing hits the little ones as well, this makes you mid health that you can utilize Berserker Rage and keep healthy enough that if you get invaded you should still be able to pop smite for bonus health and 1v1 or 2v2.
You can leave Gromp if you dont have the time.

- Rush: Build / do ASAP, no matter the circumstances.

- Pressure: To create pressure is to do something that forces your opponents to react.
- HPT: High Priority Target, usually the opponents carry.
- Immobile: A character with no gap-closers.
- Gap-closers: Abilities like Arcane Shift , Shuriken Flip , [Kaisa:4] . Abilties that can close the gap by dashing / increasing movement speed.
- Engage: The act of starting a fight, usually with an ability that provides CC.
- CC: Crowd Control, Abilities that displace an enemy or stop them using abilities. Deadly Flourish , Apprehend , Decisive Strike , Unstoppable Force .
- AD Carry: An enemy that builds Attack Damage.
- AP Carry: An enemy that builds Ability Power.
- Combo: Your champions expected combo. Pulverize > Headbutt / ย Silver Bolts > (AA) > Tumble > (AA).
- Cancel: To cancel a champions ability means to stop it as it is channeling. For example Bullet Time and Curtain Call is a channeled ability and can be stopped by using CC during her cast, or by using CC during Headbutt will stop him from travelling the full distance. Keep in mind not all channels can be cancelled, for example ย Arcane Shift .
- Effective Health: Effective health is the durability of a champion, taking into account their health as well as their armor, magic resist, any regeneration they could have as well as any shields.
- X-Factor Play: A play that turns a losing fight into a winning fight.
